I'm back!
I've missed you guys and the kitchen so much...
Because I am in college for pharmacy and NOT culinary arts, unfortunately I had to take an extended hiatus from cooking and blogging to get my life back in order and priorities straight.
Believe me, it was rough.
But, the results from my second round of exams have come back and it seems I'm on the right track again.
That means it's time to celebrate!
Nothing says party like a delicious dip.
The ultimate dip starts similarly to the ultimate grilled cheese I made in my last post - with caramelized onions.
So get your knives ready and pans hot, it's onion dip time!
Lots and lots of diced onions getting happy in the pan with a little salt and a little olive oil.
While the onions caramelize, round up the sour cream and mayo and whip up the base.
Ok ok, I know these are not the most figure friendly ingredients. This is a celebration though, and calories don't count when you're celebrating, right?
Keep an eye on those onions, and take them off the heat when they're nice and deeply caramelized...
YUM.
I could dive in right now, but if you can restrain yourself and hold off just a bit, this will get even better.
When the onions have cooled down, they are stirred into the seasoned base and allowed to chill for at least 20 to 30 minutes. This allows the rich onion-y goodness to permeate the entire dip. Believe me, it is well worth the wait, and this dip will only get better with time. If it lasts that long.
Enjoy with pretzels (my personal favorite) or the classic potato chips. Even get creative if you want. This is one of those dips so good you could eat it off an old tire (classic Guy Fieri line). But really.
Reward yourself this weekend and whip up some delicious dipping goodness for you and your friends. You deserve it!

Onion Dip from Scratch
recipe from Alton Brown
Ingredients
- 2 tablespoons olive oil
- 1 1/2 cups diced onions
- 1/4 teaspoon kosher salt
- 1 1/2 cups sour cream
- 3/4 cup mayonnaise
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground white pepper
- 1/2 teaspoon kosher salt
Directions
In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.
